Zucchini Rounds - cooking recipe
Ingredients

1/3 c. Bisquick
1/4 c. Parmesan, grated
1/8 tsp. pepper
2 eggs, slightly beaten
2 c. shredded zucchini
2 Tbsp. butter
Preparation

Stir together Bisquick, cheese and pepper.
Stir in eggs just until mixture is moistened.
Fold in zucchini.
In skillet, melt butter over medium heat.
Drop mixture into skillet by heaping tablespoonfuls for each round.
Cook 2 to 3 minutes on each side until brown.
Makes 12 rounds.
