Hush Puppies - cooking recipe

Ingredients

2 c. corn meal
1 tsp. salt
1 tsp. sugar (1/2 tsp. sugar substitute)
2 tsp. baking powder
1 1/2 Tbsp. fresh onion, minced
2 eggs, beaten
1/2 c. sweet milk

Preparation

Place corn meal, salt, sugar, baking powder and onion into mixing bowl.
Blend ingredients together. Fold in eggs and milk . Continue mixing. Preheat skillet or electric frypan with vegetable oil, about 1-inch deep.
When oil comes to a bubble, drop 1 spoonful of the batter at a time into oil.
Reduce heat to medium and cook until browned. Drain on paper towels and serve with fried or stewed fish, in particular a Catfish Stew.
