Christmas Coconut Cake - cooking recipe

Ingredients
    2 c. all-purpose flour
    1 1/2 c. granulated sugar
    3 1/2 tsp. baking powder
    1 tsp. salt
    1/2 c. shortening
    1 c. milk
    1 tsp. vanilla
    4 egg whites
    2/3 c. flaked coconut
    Tutti-Frutti Filling (recipe follows)
    1 c. chilled whipping cream
    1/4 c. powdered sugar
    3/4 tsp. almond extract
Preparation
    Heat oven to 350\u00b0.
    Grease and flour 2 round pans, 9 x 1 1/2 inches.
    Beat flour, granulated sugar, baking powder, salt, shortening, milk and vanilla in large bowl on low speed, scraping bowl constantly, 30 seconds.
    Beat on high speed, scraping bowl occasionally, 2 minutes.
    Beat in egg whites on high speed, scraping bowl occasionally, 2 minutes.
    Stir in coconut.
    Pour into pans.
