Basque Potatoes - cooking recipe

Ingredients
    1/2 c. chopped onion
    1/2 c. chopped celery
    1/2 c. shredded carrots
    1 clove garlic, minced
    1/8 tsp. pepper
    2 Tbsp. butter
    10 oz. chicken broth
    2 lb. potatoes, peeled and cut in 1 inch cubes
    1/2 tsp. salt
Preparation
    Saute onion, celery, carrot and garlic in melted butter until tender.
    Combine chicken broth with enough water to make 2 cups. Add broth, potatoes, salt and pepper to sauteed vegetables.
    Cover and simmer for 10 minutes.
    Remove cover.
    Simmer, stirring occasionally, 20 minutes or until broth is thickened.
    Sprinkle with parsley.
    Serves 4 to 6.
