West Virginia Stuffed Peppers - cooking recipe
Ingredients

6 large bell peppers (cored and parboiled)
6 strips bacon
1 (8 x 12-inch) pan cooked cornbread mix
16 oz. corn, drained
16 oz. stewed tomatoes, chopped
2 lb. canned ham, cut in cubes
Preparation

Crumble cornbread into large mixing bowl and add corn and tomatoes; mix until moist.
Add ham and mix thoroughly.
Stuff peppers with mixture from bowl.
Place one strip of bacon on top of each pepper.
Excess stuffing can be placed around peppers. Bake at 300\u00b0 for 40 minutes.
