Santa Fe Chicken Tortellini Casserole - cooking recipe

3 Tbsp. olive oil
2 c. broccoli flowerets
1 medium onion, chopped
1 medium red bell pepper, chopped
3 Tbsp. all-purpose flour
3/4 c. milk
3/4 c. chicken broth
1 tsp. ground cumin
4 c. cut-up, cooked chicken
1 1/2 c. shredded Monterey Jack cheese
1 pkg. cheese-filled tortellini, cooked and drained
Preparation

Heat oven to 325\u00b0.
Grease 3-quart casserole.
Heat 1 tablespoon of oil in skillet over medium-high heat.
Cook broccoli, onion and bell pepper in oil about 3 minutes, until crisp-tender.
Remove vegetables from skillet.
