Mango Sauce - cooking recipe

Ingredients
    3 c. peeled, diced mango (1 mango)
    1/3 c. finely chopped red onion (1 small)
    1/4 c. chopped fresh cilantro or mint
    3 Tbsp. fresh lime juice
    1 Tbsp. brown sugar
    3 jalapeno peppers, seeded and minced
    2 tsp. minced fresh ginger
    salt and freshly ground black pepper
Preparation
    In a bowl, combine all ingredients and toss gently to mix. Taste and adjust seasonings.
    Serve within 1 hour.
    Makes about 3 cups.
