Hopping Johns - cooking recipe

Ingredients
    1 16 oz pkg blackeyed peas
    1 c. chopped onion
    1 c. rice (uncooked)
    1 lb. sausage (browned)
    1/2 c. chopped green pepper
    1/2 c. chopped red pepper
    salt & pepper to taste
Preparation
    In large sauce pan cooke peas according to pkg.
    instructions until almost done; add remaining ingredients and simmer untile peas are tender, about 30 minutes.
    Add warm water untile there is enough pot liquor.
    Serve with cornbread and slaw.
    (This is a tradition at the Stoker's on New Year's Day.)
