Fancy Sweet Potatoes - cooking recipe

Ingredients

1 can pineapple rings (10 rings in can)
1 can sweet potatoes
1/2 tsp. cinnamon
4 Tbsp. melted butter
1/2 c. brown sugar
1/4 tsp. nutmeg
maraschino cherries and miniature marshmallows (optional)

Preparation

Preheat oven to 400\u00b0.
Mash potatoes, sugar, spices and butter together.
Use ice cream scoop.
Scoop one ball of mixture into center of each pineapple ring.
Place maraschino cherry in center of each scoop and place 3 or 4 marshmallows on potato.
Bake in 400\u00b0 oven for 10 minutes on cookie sheet.
These can be made ahead and baked and served later.
