Baked Eggplant - cooking recipe

Ingredients
    1 large eggplant, diced, cooked and drained
    1 can mushroom soup
    salt and pepper
    1/3 c. milk
    1/4 c. butter
    2 c. herb stuffing
    1 onion, chopped
Preparation
    Mix all together. Be sure to season with salt and pepper. Bake 30 minutes at 350\u00b0. Grated cheese on top to finish as it will melt.
