Piccalilli - cooking recipe

Ingredients
    22 medium green tomatoes, quartered
    1 pt. small onions (yellow)
    6 green peppers, cut 1/4-inch lengthwise
    6 sweet red peppers, cut 1/4-inch lengthwise
    1 qt. vinegar
    1/2 qt. vinegar
    3 1/2 c. sugar
    1/4 c. salt
    1 1/2 tsp. allspice
    1 1/2 tsp. cinnamon
    4 tsp. celery seed
    1/2 c. mustard seed
Preparation
    Wash and chop the tomatoes, onions, green peppers and red peppers (discarding liquid is optional).
    Place in a large pot. Add the 1 quart vinegar.
    Boil 30 minutes, stirring often.
    Add the remaining ingredients.
    Simmer 3 minutes and keep simmering while packing one jar at a time, sealing immediately.
    Makes 6 to 7 pints.
