Sweet Potato Burrito Spirals - cooking recipe

Ingredients
    16 oz. vegetarian refried beans, warm
    4 large (9 1/2 inch) flour tortillas, warm
    2 c. chopped sweet potatoes, boiled
    1/2 medium avocado, thinly sliced
    1/2 c. chopped scallions
    1 c. finely shredded lettuce
    2 Tbsp. chopped, fresh cilantro
Preparation
    Spread warm refried beans on tortilla, layer remaining ingredients and roll up tightly.
