Lemon-Almond Wafers - cooking recipe
Ingredients

1 c. margarine
1 c. granulated sugar
1 large egg
1 tsp. vanilla
2 c. cake flour
1 1/2 Tbsp. freshly grated lemon peel
sliced almonds (for garnish)
Preparation

Heat oven to 350\u00b0.
Use ungreased cookie sheets.
Beat margarine and sugar with electric mixer until fluffy.
Beat in egg, then vanilla.
Gradually stir in flour until blended.
Stir in lemon peel.
Drop heaping teaspoonfuls 2 inches apart on cookie sheet.
Gently press a few sliced almonds into center of each. Bake 8 to 10 minutes until edges are golden brown.
Cool on sheet 1 to 2 minutes, then remove to wire rack to cool completely.
