Fresno Fritters - cooking recipe

Ingredients
    1 egg
    1/4 c. milk
    1 c. pancake mix
    1 1/2 c. whole kernel corn, drained
    3/4 c. raisins
    cooking oil 1 inch deep in skillet
Preparation
    Blend egg and milk.
    Add pancake mix, stirring just enough to blend.
    Fold in corn and raisins.
    Drop by spoonfuls into hot oil. Cook until golden brown, about 4 minutes.
    Drain on paper towels. Serve warm with butter and syrup for breakfast or as a side dish. Makes 24-30.
