Oven Stew - cooking recipe

Ingredients
    1 1/2-2 lbs. stew meat (trimmed of all visible fat)
    1 medium onion, coarsely chopped
    3-4 carrots, pared and sliced
    3-4 ribs celery, sliced
    4-5 potatoes, pared and chunked
    1 clove garlic, diced (optional)
    1/2 tsp. salt
    1/2 tsp. pepper
    1 Tbsp. sugar (optional)
    2 Tbsp. minute tapioca
    1 (15 oz.) can thick and chunky tomato sauce
    1/2 c. water
Preparation
    Layer ingredients in a roaster, casserole dish or baking pan in order listed.
    DO NOT MIX.
    Cover tightly and bake at 250\u00b0 for 5 hours.
    DO NOT OPEN oven during baking time.
    Note:
    If desired, remove cover and continue baking 5-10 minutes at 400\u00b0-450\u00b0 to thicken and lightly brown surface vegetables.
