Butternut Squash Soup - cooking recipe
Ingredients

butternut squash (about 1 1/2 lb.)
2 3/4 c. chicken broth
1 orange (rind and juice)
1 Tbsp. butter
1 tsp. minced ginger root
dash of nutmeg
1/2 c. milk
salt and pepper
Preparation
-
Peel and dice squash.
Simmer in broth until tender.
Puree. Return to stove and add remaining ingredients.
Simmer.
Adjust seasonings.
