Veal Cutlets Maryland - cooking recipe

Ingredients
    4 veal cutlets (3/4 to 1-inch thick)
    2 Tbsp. melted butter
    salt
    3 eggs, slightly beaten
    pepper
    2 c. fine sifted cracker crumbs
    1/3 c. butter
    1 1/3 c. sweet cream
    2/3 c. rich milk
Preparation
    Rub cutlets with melted butter, then sprinkle with salt and pepper.
    Roll cutlets in cracker crumbs; dip into beaten eggs, then back into crumbs.
    Melt butter in shallow pan and cook cutlets to a golden brown on both sides.
    Pour cream and milk over cutlets.
    Cover pan tightly and cook in 300\u00b0 oven for 1 hour. Remove meat.
    Thicken sauce in pan with a few fine cracker crumbs and serve hot.
