Jeff Davis Pie - cooking recipe

Ingredients
    3 c. sugar
    4 eggs
    1 Tbsp. flour
    1 (12 oz.) can evaporated milk
    1 stick margarine
    1/2 tsp. salt
    2 tsp. vanilla
    1 c. shredded coconut
    1 c. pecans
Preparation
    Mix sugar and margarine; add eggs.
    Beat together.
    Add flour, salt and vanilla.
    Mix well.
    Add 1 can evaporated milk and mix all together.
    Sprinkle 1/2 coconut in bottom of 9-inch unbaked pie crust.
    Add 1/2 cup pecans; pour 1/2 pie mixture over coconut and pecans.
    Bake at 400\u00b0 until pie is consistency of custard and a golden brown.
    Repeat with second pie crust and rest of ingredients.
    Makes 2 pies.
