Cheesy Orzo - cooking recipe
Ingredients

1 1/4 c. orzo pasta
1 onion, chopped
1 1/2 Tbsp. reduced-calorie margarine
1 1/2 Tbsp. all-purpose flour
1/4 tsp. salt
1 1/2 c. skim milk
1 1/2 tsp. fresh or 1/2 tsp. dried thyme
1/3 c. grated Parmesan cheese
Parmesan cheese curls and thyme sprig for garnish
Preparation

Prepare orzo pasta according to package directions; drain. Meanwhile, in small saucepan, saute onion in margarine for 5 minutes, until translucent.
Stir in flour and salt; cook 1 minute.
Gradually stir in milk and thyme.
Cook, stirring constantly, until mixture thickens.
Reduce heat to low; stir in Parmesan cheese.
Continue cooking 3 to 4 minutes, until cheese melts.
Stir orzo into cheese sauce.
Garnish with Parmesan cheese curls and thyme sprig.
