Squash Casserole - cooking recipe

Ingredients
    6 c. yellow crookneck squash
    1/4 c. minced onion
    1 can undiluted cream of chicken soup
    1 (8 oz.) carton sour cream
    1 stick margarine, melted
    1 (8 oz.) Stove Top stuffing mix
    salt and pepper to taste
    1 c. shredded carrots
Preparation
    Cook squash and onion for 5 minutes in salted water.
    Drain well.
    Combine soup, sour cream and mix in squash, then fold in carrots.
    Make Stove Top stuffing.
    Mix as directed on box.
    Line the bottom of baking dish with half the stuffing mix.
    Pour the squash mixture, then add the other half of stuffing mix.
    Bake, uncovered, in a 350\u00b0 oven for 30 minutes.
