Chicken And Broccoli Stir-Fry - cooking recipe

Ingredients
    1 Tbsp. oil
    1 lb. boneless, skinless chicken breasts, cut into strips
    2 c. broccoli flowerets
    1 medium red pepper, cut into thin strips
    1 (8 oz.) can sliced water chestnuts, drained
    1 1/2 c. chicken broth
    2 Tbsp. soy sauce
    2 Tbsp. cornstarch
    1 tsp. garlic powder
    3/4 tsp. ground ginger
    2 c. Minute rice (uncooked)
Preparation
    Heat oil in a large skillet on medium-high heat.
    Add chicken; cook and stir until browned.
    Add broccoli, red pepper and water chestnuts; cook and stir until tender-crisp.
    Mix broth, soy sauce, cornstarch, garlic powder and ginger; stir into chicken mixture.
    Bring to a boil; boil 1 minute.
    Prepare rice as directed on package, omitting margarine and salt.
    Serve chicken and vegetables over rice.
    Makes 4 servings.
