Raisins Bars(Diabetic) - cooking recipe
Ingredients

1 c. raisins
3/4 c. unsweetened apple juice
2 Tbsp. shortening
1 c. all-purpose flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ground cloves
1/4 c. chopped nuts (optional)
Preparation

In a small saucepan, bring raisins, apple juice and shortening to a boil. Remove from heat and cool. Mix remaining ingredients, except nuts. Stir into raisin mixture. (Then, mix in nuts, if desired.) Spray an 8-inch square nonstick baking pan with cooking spray. Spread dough evenly in pan. Bake in a preheated 350\u00b0 oven 35 to 40 minutes. Remove from oven. Cool. When cooled, cut into 2-inch bars. (May be stored in a tightly covered container.) Makes 16 bars, 75 calories each (85 calories each with nuts).
