Hush Puppies - cooking recipe

Ingredients

2 c. corn meal
1 c. flour
1 Tbsp. sugar
1 Tbsp. baking powder
1/2 tsp. salt
1 tsp. black pepper
1 egg
1/2 to 1 tsp. hot sauce
1 1/2 c. buttermilk
1 c. chopped onion
1 c. whole kernel corn
corn or vegetable oil

Preparation

Combine first 6 ingredients in a medium bowl; set aside. Combine egg and hot sauce.
Stir in buttermilk.
Pour into dry ingredients, stirring just enough to mix.
Stir in onion and corn (do not over mix batter).
Drop by tablespoon into hot oil.
Fry until brown.
Yields 3 dozen.
