Ham And Rice Stir-Fry - cooking recipe

Ingredients
    1 bag Success rice
    1 c. sliced green onions
    1 c. thinly sliced celery
    2 Tbsp. cooking oil
    4 oz. can mushroom pieces and stems, drained
    1 c. frozen peas
    1/4 c. sliced ripe olives
    6 3/4 oz. can Hormel chunk ham, flaked with fork
    2 large eggs, beaten
    1 Tbsp. soy sauce
Preparation
    Cook Success rice according to package directions; drain and set aside.
    Saute onions and celery in oil until tender-crisp. Add mushrooms, peas, olives and Hormel chunk ham; cook 3 to 4 minutes.
    Push mixture aside in pan and scramble eggs.
    Add rice and soy sauce.
    Toss lightly with ham and rice mixture until completely heated.
    Garnish with mandarin orange slices and celery leaves, if desired.
    Makes 4 to 6 servings.
