Spaghetti De Siciliano - cooking recipe

Ingredients
    4 to 5 Tbsp. olive oil
    1 medium onion, diced
    1 green pepper, julienned
    2 cloves garlic, minced
    1 eggplant, peeled and diced
    1 large can whole tomatoes, drained
    1 can flat anchovy fillets, shredded
    1/2 c. black olives, sliced
    8 oz. box fresh mushrooms, sliced
    1 Tbsp. capers
    1 tsp. basil
    1 Tbsp. parsley
    red pepper flakes
    1 pkg. spaghetti, cooked and tossed with melted butter
    2 Tbsp. Parmesan cheese
Preparation
    Saute medium onion in olive oil over medium heat for 10 minutes.
    Add green pepper, eggplant, garlic and mushrooms and saute for 15 more minutes.\tAdd tomatoes and basil.
    Cover and simmer
    for
    30
    minutes.
    Add
    anchovies,\tolives, capers and parsley
    and
    cook 10 minutes more.
    Serve over hot spaghetti. Time
    of
    preparation: Pre-prep: 20 minutes.
    Cooking time: 60 minutes.
    Serves 6 to 8.
