Borscht Cocktail - cooking recipe

Ingredients
    1 1/4 c. beet liquid (drained from canned beets)
    3/4 c. tomato juice
    1/4 tsp. onion powder
    1/4 tsp. salt
    1 Tbsp. lemon juice
    1/4 c. plain, low-fat yogurt
Preparation
    Mix all ingredients except yogurt together.
    Chill 2 to 3 hours in a covered jar.
    Serve in cocktail glasses, topping with 1 tablespoon of yogurt.
    Makes 4 servings (yields 2 cups).
    Good for diabetic diets.
