Funnel Cakes - cooking recipe

Ingredients
    2 beaten eggs
    1 1/2 c. milk
    2 c. sifted flour
    1 tsp. baking powder
    1/2 tsp. salt
    2 c. cooking oil
    sifted confectioners sugar
Preparation
    In a bowl, combine eggs and milk.
    Sift together flour, baking powder and salt.
    Add to egg mixture.
    Beat until smooth.
    Test to see if mixture flows easily through a funnel.
    If too thick, add milk.
    If too thin, add flour.
    In 8-inch skillet, heat oil to 360\u00b0.
    Cover bottom opening of funnel with finger and pour a generous 1/2 cup of batter into hot oil in spiral shapes, initials, etc.
    Fry until golden brown, about 3 minutes.
    Turn carefully with tongs and wide spatula.
    Cook 1 minute more.
    Drain on paper towels and sprinkle with powdered sugar.
    Serve hot. Serves 4 to 6.
