Broiled Salmon With Cucumbers - cooking recipe

Ingredients
    1 c. diced onions
    1/2 c. vinegar
    4 cloves garlic, minced
    2 tsp. peeled minced gingerroot
    1 tsp. low-sodium soy sauce
    2 cucumbers, thinly sliced
    1 1/2 lb. salmon fillets
    1 Tbsp. olive oil
    4 c. hot cooked rice
Preparation
    In a large nonstick frying pan over medium-high heat, combine the onions, vinegar, garlic, ginger and soy sauce.
    Bring to a boil, stir and cook for 3 minutes.
    Remove from heat.
