Sweet Potato Buns - cooking recipe

Ingredients
    1 lb. sweet potatoes
    1 pkg. active dry yeast
    1 c. warm milk (105~F - 115~F)
    2 Tbsp. oil
    2 Tbsp. brown sugar, packed
    1 tsp. salt
    3 to 3 1/2 c. all-purpose or bread flour
Preparation
    Bake or broil sweet potatoes until tender.
    Cool.
    Remove potato from skins and mash.
    (You should have 1 cup.)
    In large bowl, dissolve yeast in warm milk.
    Stir in mashed sweet potatoes, oil, brown sugar, salt and 2 cups flour.
    Turn dough out onto floured board.
    Knead about 8 minutes, incorporating additional flour, until dough is smooth and elastic.
    Coat large bowl with oil.
    Place dough in bowl, turning to coat all sides with oil. Cover, let rise until almost doubled, 1 to 1 1/2 hours.
    Punch dough down.
    Divide into 12 balls.
    Knead and tuck ends under each one until top is smooth.
    Place on greased cookie sheet 2 inches apart.
    Cover.
    Let buns rise until almost doubled in size.
    Bake at 350\u00b0 for about 20 minutes or until golden brown.
    Remove to racks to cool.
    Makes 12 buns.
