Shrimp And Yellow Rice - cooking recipe

Ingredients
    1/2 c. chopped onion
    1 Tbsp. water
    2 1/4 c. hot water
    1 1/4 c. uncooked brown rice
    1/2 medium red pepper, cut in slices
    1/2 medium green pepper, cut in slices
    2 tsp. low sodium chicken bouillon granules
    1 tsp. oregano
    1/2 tsp. ???
    1 bay leaf
    12 oz. small shrimp, shelled and deveined
    1 medium tomato, chopped
Preparation
    In a 3-quart casserole, combine onion and 1 tablespoon of water; cover and microwave for 12 minutes on High.
    Add water, rice, both peppers, bouillon and spices.
    Mix. Cover and cook on High for 5 minutes.
    Reduce heat to 50%; cook 40 to 50 minutes. Add shrimp and tomato; mix.
    Cover and cook on Medium for 5 to 8 minutes.
    Let stand 5 minutes.
