Zucchini Corn-Fetti - cooking recipe
Ingredients

2 Tbsp. butter or margarine
2 c. sliced zucchini
1/4 c. chopped onion
1/4 c. chopped green pepper
1 (12 oz.) can whole kernel corn
1/2 tsp. basil
1/8 tsp. pepper
1/2 c. shredded Cheddar cheese
1 large tomato, cut into wedges
Preparation

In medium skillet, melt butter; add zucchini, onion and green pepper and cook until zucchini is tender, 8 to 10 minutes.
Stir in corn, basil and pepper and heat thoroughly.
Add cheese and heat until cheese is melted.
Pour into serving dish and garnish with tomato wedges.
Serves 4 to 5.
