Magnolia House Chicken Breasts - cooking recipe

Ingredients
    2 whole chicken breasts, split, boned and skinned (2 lb.)
    2 Tbsp. butter
    1/2 tsp. salt
    1/4 tsp. freshly ground black pepper
    1/2 lb. fresh mushrooms, sliced
    2 tsp. fresh lemon juice
    1/3 c. Madeira, sherry or broth
    1/2 c. whipping cream
    1 c. shredded Swiss cheese
Preparation
    Brown chicken breasts in butter over medium-high heat for 5 minutes.
    Sprinkle with salt and pepper.
    While chicken cooks, marinate mushrooms in lemon juice.
    Add Madeira, sherry or broth to chicken in pan; turn over.
    Simmer another 5 minutes, or until chicken breasts are cooked through (do not overcook).
    Remove to warm platter.
    Turn heat to high; boil liquid mixture down to about 1/4 cup.
    Add mushrooms; saute until mushroom liquids are evaporated.
    Add cream; boil over high heat until sauce is thickened and reduced.
