Orange Glazed Sweet Potatoes - cooking recipe

Ingredients
    4 medium sweet potatoes
    1/2 cup packed brown sugar
    1/2 cup orange marmalade
    1 tsp. grated orange peel
    1/4 cup margarine
Preparation
    Wash and pierce skin of sweet potatoes.
    Microwave on high for 6 - 8 minutes until almost tender.
    Peel sweet potatoes and slice 1/8 inch thick.
    Place in a 1 1/2 quart casserole.
    Mix together brown sugar, marmalade and orange peel.
    Pour over sweet potatoes.
    Dot with margarine.
    Cover with a tight fitting lid or plastic wrap.
    Microwave on high for 5 - 6 minutes or until heated well.
    Stir half way through cooking.
