Acorn Squash Baked With Pineapple(6 Servings)) - cooking recipe

Ingredients
    3 acorn squash, halved
    1/2 c. crushed pineapple, drained
    2 Tbsp. dry sherry
    2 Tbsp. brown sugar
    6 Tbsp. butter
    1/4 tsp. ground nutmeg
    1 tsp. salt
Preparation
    Remove seeds and fiber from squash halves.
    Place in greased baking dish and put 1 teaspoon each of sherry, brown sugar and butter in each half.
    Cover and bake in a hot oven (400\u00b0) for 30 minutes or until tender.
    Scoop cooked squash out of shells, leaving wall about 1/4-inch thick.
    Mash squash and combine with the remaining 4 tablespoons butter, pineapple, salt and nutmeg. Beat until well blended.
    Spoon back into shells and return to hot oven (425\u00b0) for 15 minutes.
