Green Rice Ring With Baby Carrots - cooking recipe

1 3/4 c. long grain rice
4 qt. water
1 1/2 tsp. salt
1 lb. raw spinach
3 scallions
4 Tbsp. melted butter
Preparation

Boil 4 quarts water. Add salt to water. Add rice gradually and let cook about 20 minutes; tender, but firm. Drain and rinse. Chop spinach in blender or food processor. Make a thick puree; stir into rice. Add salt and pepper to taste. Add the melted butter. Press rice firmly into buttered ring mold. Cover with aluminum foil. Set mold in pan and pour boiling water around it. Bake 20 to 30 minutes until piping hot. Unmold on round platter and fill center with cooked, buttered carrots.
