Ironstone Dressing - cooking recipe

Ingredients
    1/4 c. margarine
    1/4 c. flour
    1 Tbsp. salt
    1/2 tsp. white pepper
    2 c. milk
    1/2 lb. sharp Cheddar cheese, grated
    1/2 c. salad oil
    1/2 c. cider vinegar
    1 tsp. Worcestershire sauce
Preparation
    In medium saucepan, slowly heat margarine until melted; remove from heat.
    Add flour, salt, pepper and Worcestershire.
    Stir until smooth.
    Add milk, small portion at a time.
    Bring to boil over medium heat, stirring continually.
    Reduce heat and simmer.
    Add 1/2 pound Cheddar cheese.
    Continue to stir and simmer until cheese is completely melted.
    Remove and cool.
    When cheese sauce has cooled, add alternately portions of oil and vinegar while stirring. To add zest, add garlic clove or 1 tablespoon horseradish.
    Chill. Shake before using.
    Makes 1 quart.
    Also use on open-faced sandwiches or baked potato as topping.
