Summer Garden Salad - cooking recipe
Ingredients

2 c. shredded cabbage
1 c. chopped zucchini or yellow summer squash
1 c. chopped cucumber
1/2 c. chopped green pepper
1/4 c. sliced green onions (including tops)
1/4 c. mayonnaise or salad dressing
1/4 c. sliced radishes or carrots
1/2 c. dairy sour cream
1 Tbsp. lemon juice
2 tsp. prepared horseradish
1 tsp. prepared mustard
1/2 tsp. salt
1/8 tsp. pepper
1/4 c. coarsely chopped peanuts (if desired)
Preparation

In salad bowl, combine cabbage, zucchini, cucumber, green pepper, green onions and radishes.
Chill.
In small bowl, blend remaining ingredients, except peanuts.
To serve, pour dressing over vegetables.
Toss to coat.
Sprinkle with peanuts.
Garnish with slices of zucchini, cucumber, green pepper or radishes, if desired.
Refrigerate leftovers.
Makes 8 to 10 (1/2 cup) servings.
