Mushroom Stew - cooking recipe

Ingredients
    5 lb. stewing pork, cut in small chunks
    4 medium onions, cut in small chunks
    3 stalks celery, sliced
    4 garlic cloves
    2 (28 oz.) cans tomatoes (concentrated)
    5 green peppers, cut in chunks
    2 lb. fresh mushrooms, sliced
    pepper and salt to taste
Preparation
    Cube meat and brown in oil (olive oil preferred).
    Chop onions and celery; add to meat.
    Mince garlic; add to meat mixture, then add the tomatoes and a little water.
    Simmer about 3 hours, then add peppers and mushrooms.
    Simmer 2 more hours.
    Enjoy with hot bread.
