Curry Surprise Appetizers - cooking recipe

Ingredients
    1 c. chopped, cooked chicken
    2 Tbsp. chopped apple
    2 Tbsp. chopped green onion
    1 c. finely chopped peanuts
    1/2 c. mayonnaise
    1/2 tsp. curry powder
    dash of hot sauce
    1 (7 oz.) bag shredded coconut
Preparation
    Combine the chicken with the chopped apple, green onion, peanuts, the mayonnaise, curry powder and hot sauce in a large bowl, blending well.
    Cover with plastic wrap and refrigerate for 4 hours or until well chilled.
    Shape the chilled chicken mixture into 1-inch balls (about 1 tablespoon each).
    Roll in the shredded coconut on wax paper.
    Refrigerate until serving time.
    Makes 24.
