Fried Eggplant - cooking recipe
Ingredients

1 large eggplant
4 eggs
1/4 c. grated cheese
1 tsp. basil
salt
black pepper to taste
oil for frying
Preparation
-
Make a batter with the eggs, basil, salt and pepper.
Peel and slice the eggplant.
Thin slices are preferable.
Dip each slice in the batter and drop into heated oil in frying pan.
Brown on both sides.
Drain on paper towels and serve.
