Creole Sausage Jambalaya - cooking recipe
Ingredients

1/2 lb. sausage
1 c. wild rice
1 Tbsp. fat
1 medium onion, chopped
1 small bell pepper, chopped
1 stalk celery, chopped
1 small can whole tomatoes
1 clove garlic, mashed
dash of thyme
1 1/2 Tbsp. chopped parsley
1 1/2 Tbsp. chopped green onion
Preparation

Preheat fat in iron skillet or Dutch oven.
Add 1 cup water, crumbled sausage, cooked slowly, until brown, stirring occasionally.
Add onion, celery, tomatoes, bell peppers and garlic; cook 5 minutes.
Add rice and 1 1/2 cups water.
Cook, covered, over very low heat 30 minutes or until water has cooked out.
Stir occasionally.
Add thyme, parsley and onion.
Stir mixture well.
