Mussels In Herb Butter - cooking recipe

Ingredients
    2 doz. mussels
    1/2 c. butter or margarine, softened
    1 Tbsp. parsley, chopped
    1 Tbsp. lemon juice
    1 shallot, minced
    2 large cloves garlic, minced
    1/2 tsp. salt
    1/8 tsp. pepper
Preparation
    Steam well scrubbed and bearded mussels in 1 cup water. Cover; cook for about 5 minutes, or until shells open.
    Save half a shell for each mussel.
    Blend the remaining ingredients thoroughly.
    Put small amount of herb butter in each shell.
    Lay mussel on it.
    Cover with more butter and place in single layer in shallow pans (pie pans).
    Bake at 400\u00b0 for 15 to 20 minutes. Makes 4 servings as an appetizer.
