Queen Cakes - cooking recipe
Ingredients

1 stick butter or margarine
1 c. sugar
3 eggs
1 1/2 c. flour
1/2 tsp. baking powder
1/2 c. currants
grated lemon rind
milk if necessary
Preparation

Beat butter and sugar to a cream.
Add the eggs, one at a time, and beat until mixture is stiff and uniform.
Sift the flour and baking powder and add the currants and grated lemon rind. Stir into creamed mixture (add milk if necessary) to form a soft mixture.
Place the mixture in 24 muffin tins (greased) and bake at 350\u00b0 for 16 to 20 minutes.
When cool, cover tops with pink and white icing.
