Cherry Fruit Tapioca - cooking recipe

Ingredients
    cherry juice from drained cherries plus water to equal 1 gal.
    1 tsp. salt
    1 lb. sugar
    1/4 c. lemon juice
    2 c. quick cooking tapioca
    6 c. tart cherries, drained
    2 tsp. almond extract
    whipped topping (optional)
Preparation
    Bring juice, salt, sugar and lemon juice to a boil.
    Gradually add tapioca.
    Cook 15 minutes on low heat, stirring continually. Remove from heat.
    Cool.
    Fold in cherries and almond extract. Chill.
    Serve topped with whipped topping.
