Mashed Potato Cake - cooking recipe

Ingredients
    2 c. sugar
    1 c. butter
    4 egg yolks, beaten
    1 c. sour cream
    2 tsp. cocoa
    1 c. mashed potatoes, cooled
    1 tsp. ginger
    1 tsp. vanilla
    1 tsp. soda
    1/2 tsp. salt
    1 c. nuts, chopped (pecans or walnuts)
    1 c. raisins
    1 c. apples, diced
    2 1/2 c. flour
    stiffly beaten egg whites
Preparation
    Cream together sugar, butter and egg yolks.
    Add sour cream, cocoa and mashed potatoes.
    Beat in ginger, vanilla, soda and salt. Blend in nuts, raisins and apples.
    Add flour, mixing slowly.
    Beat egg whites until stiff and gently fold in.
    Bake in tube pan or can bake in coffee cans and cut in half when done to look like logs. Ice with coffee icing.
