Stuffed Peaches (Salad)(Diabetic) - cooking recipe

1/2 c. cottage cheese (2% fat or less)
1/2 c. unsweetened pineapple, diced
1/2 tsp. lemon juice
2 fresh peaches, halved
lettuce
Preparation

Mix together cottage cheese, pineapple and lemon juice; fill peach halves with cheese mixture.
Serve peaches on a bed of lettuce.
Yields 2 servings.
One serving equals 1 1/4 fruits and 1 lean meat exchange.
