Garlic Stuffed Chicken Breasts - cooking recipe

Ingredients
    4 medium chicken breasts
    16 cloves garlic (1 head)
    6 Tbsp. chopped parsley
    1/4 tsp. salt and pepper
    1/2 tsp. lemon rind
    1 Tbsp. butter or margarine
    1 Tbsp. olive oil
    2 Tbsp. lemon juice
Preparation
    Trim off any excess fat from chicken. Blanch the garlic cloves in boiling water for 5 to 10 minutes. (You do not have to peel the cloves.)
    Drain cloves, remove skins and slice thinly. Combine the garlic with parsley, salt, pepper and lemon rind.
    Place about 1 tablespoon mixture under the skin of each chicken breast.
    Heat butter and olive oil in a heavy skillet. Brown the chicken, skin side down first, then turn. Brown about 4 minutes on each side. Lower heat and cover skillet. Simmer about 15 minutes, then remove cover. Saute remaining garlic mixture in a little butter.
    Stir in lemon juice and spoon over chicken. Sprinkle with extra parsley.
