Diabetic Chicken Salad - cooking recipe

Ingredients
    9 oz. cooked chicken (about 1 1/2 c.)
    2 small apples
    1/4 c. celery
    1/4 c. raisins
    2 tsp. lemon juice
    1/4 c. mayonnaise
Preparation
    Dice chicken, apples and celery.
    Mix together and add raisins. Chill.
    Mix lemon juice and mayonnaise. Pour over salad and toss.
    Serve on lettuce leaf.
