Sweet And Sour Chicken - cooking recipe

Ingredients
    1 (20 oz.) can pineapple chunks
    1/2 c. brown sugar, firmly packed
    1/4 c. cornstarch
    1/2 tsp. ground ginger
    1/2 c. cider vinegar
    1/4 c. soy sauce
    1 1/4 c. green pepper strips
    1 c. sliced onion
    1 c. sliced, pared carrots
    2 c. cubed, cooked chicken
    hot fluffy rice
Preparation
    Drain pineapple, reserve juice.
    Add enough water to juice to make 3 cups; set aside.
    Combine brown sugar, cornstarch and ginger in saucepan; gradually stir in reserved juice, vinegar and soy sauce.
    Bring mixture to a boil, stirring constantly.
    Add the green pepper, onion, carrots and chicken.
    Cover and simmer 10 minutes, or until vegetables are tender-crisp.
    Serve over rice. Makes 6 servings.
