Peach Glazed Corned Beef - cooking recipe

Ingredients
    3 lb. piece corned beef
    1 bay leaf
    2 tsp. prepared mustard
    1/4 c. brown sugar
    1 (13 oz.) can peach halves
    1/4 c. catsup
    2 Tbsp. vinegar
Preparation
    Place corned beef in heavy saucepan or Dutch oven.
    Add water to cover.
    Add bay leaf; cover and simmer 2 1/2 to 3 hours, or until meat is tender.
    Remove from heat.
    Cool meat in cooking liquid.
    Remove meat; slice across the grain.
    Arrange slices, overlapping, in a 12 x 7 1/2 x 2-inch baking dish.
    Drain peaches, reserving 1/4 cup syrup.
    Arrange peaches around meat.
    Combine reserved syrup and remaining ingredients; pour over meat.
    Bake at 350\u00b0 for 1 hour, basting occasionally.
    Makes 6 servings.
